Ah, Valentine’s Day. As if singletons needed a day to specifically point out the fact that no, actually no one can stand you. I don’t know many couples who really care that much about Valentine’s day. I mostly look at it as an opportunity to eat heart-shaped pizza and bake.
Eric looks at it as an opportunity to make lots of money at work, because for some reason every couple who never goes out to dinner wants to eat out on the big day. Worst idea ever, people. It’s a factory out there. Get em in, get em out. Crunch the menu. I don’t get it. So I went and had a drink at the bar while Eric finished up at work, we picked up our heart-shaped pizza from Lou Malnati’s on the way home and had a lovely evening of wine, pizza and Zombieland. Because nothing says Valentine’s Day like Zombieland.
Oh, and I made these.
All you need for these lovely little cakes is a heart shaped cookie cutter, your favorite chocolate cake recipe and some filling. I filled half of them with raspberry preserves and half with cherry filling, but you could use anything really. Bake the cakes, cut out as many hearts as you can get and slice them into two layers. Fit them back into the cutter and layer with your filling, then top with the other cake layer. Cover them with ganache and chill. Deeelicious.
And decadent. They’re a perfect Valentine’s Day treat for you and your honey. Or just for you. And if you’re alone you get to eat more without worrying that you look like a glutton. Fortunately with Eric I never worry about that. He seems to like me, gluttonous tendencies and all. Thanks, love.
