- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup softened unsalted butter
- 3/4 cup sugar
- 1 egg
- 2 tablespoons orange zest
- 1/2 cup fresh orange juice
Orange Frosting
- 2 1/2 tablespoons softened unsalted butter
- 1 1/2 cups confectioners’ sugar
- 2 tablespoons orange zest
- 1 1/2 to 2 tablespoons orange zest
Preheat oven to 400°. Sift flour, baking powder, baking soda and salt into a bowl and set aside.
In a stand mixer, cream butter and sugar for several minutes till light and fluffy. Add egg and orange zest and mix until combined. Add flour mixture and orange juice in three additions, alternating between the four mixture and the juice. Drop teaspoonfuls of dough onto a lightly greased cookie sheet at least 2 inches apart. Bake for 8-10 minutes on upper racks. Remove and promptly transfer to wire racks to cool. Cool completely before frosting.
Frosting:
In a stand mixer, cream butter and sugar at medium speed for several minutes until fluffy (note: mixture will be dry and crumbly). Add orange zest and juice and mix until smooth.
