Banana Chocolate Chip Cookies

  • 1 1/2 cups all purpose flour
  • 1 3/4 cups rolled old fashioned oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 3/4 cup softened unsalted butter
  • 1 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 cup mashed banana
  • 1 cup chocolate chips or chopped walnuts

Preheat oven to 375° and line several cookie sheets with parchment paper. Sift the flour, oats, baking soda, cinnamon and salt into a bowl and set aside. 

In a stand mixer, cream butter and sugar on medium speed for several minutes until light and fluffy. Add the egg and vanilla and mix until combined. Add half the flour mixture and mix on low speed just until combined; add the banana and mix to combine. Add the rest of the flour mixture and mix until combined. Mix in chocolate chips or nuts.

Drop tablespoon sized balls of dough onto cookie sheets about 2 inches apart. Bake for 12-14 minutes, rotating sheets halfway through. Cool sheets on wire racks for a few minutes before transferring cookies directly onto racks with spatula to finish cooling.
