Amish Puff Cookies

  • 1.5 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1/2 cup softened unsalted butter
  • 1/2 cup light brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1/4 cup sugar
  • 4 teaspoons ground cinnamon

Sift flour, baking powder, baking soda, cream of tartar and salt into a bowl & set aside. Cream butter and sugars on medium speed for several minutes until light and fluffy. Add egg and mix until combined. Add flour mixture and mix until just combined. Cover dough and refrigerate for 30 minutes. 

Preheat oven to 375 degrees. Line several cookie sheets with parchment. Combine cinnamon & sugar in bowl. Roll tablespoon-sized balls of dough in the cinnamon-sugar and place on cookies sheets two inches apart. Bake 8-10 minutes or until golden brown. Cool on wire racks.

If you want the chocolate chip variety, skip the cinnamon & sugar and fold in 1 cup of chocolate chips instead.
